Sweet & Spicy Asian Zucchini Antipasti
Antipasti has it´s origin in good old Italy and is the traditional first course of a formal Italian meal. Typical ingredients of a traditional antipasto include cured meats, olives, peperoncini, mushrooms, anchovies, artichoke hearts, various cheeses (such as provolone or mozzarella), pickled meats, and vegetables in oil or vinegar. We combined the Italian and Asian cuisine in this vegan recipe. Our Antipasti is a perfect starter, side dish or just a low fat meal. Super Light, delicious and healthy!
Ingredients
3 medium zucchini, thin slices
2 garlic gloves, finely chopped
2 spring onions, thinly sliced
2 cm ginger, grated
50 g cashews, crushed & roasted
2 red Thai chilis, deseeded & finely chopped
50 ml veggie stock
1 tbs peanut oil
2 tbs soy sauce
2 tbs palm sugar
1 pn cumin
Lime juice of 1 fresh lime
Fresh Thai basil leaves, for serving
Heat peanut oil a pan and stir fry garlic, ginger and palm sugar on medium heat for 2 minutes.
Add Zucchini slices and soy sauce. Stir stry for 2 minutes.
Add veggie stock and simmer veggies for 3 minutes. Shut down heat and stir in spring onions and Thai chili.
Season with cumin and lime juice. Sprinkle zucchini antipasti with roasted cashews and fresh coriander leaves. Serve with rice or as a side dish for many main dishes.
