Stewed Tofu with Prawns (Đậu Hũ Non Om Tôm)
Đậu Hũ Non Om Tom or stewed Tofu with prawns is an easy to cook and very tasty Vietnamese meal for the whole famlily. The combination of the buttery baby tofu with the sweetness of the prawns will give this simple dish it´s special flavor. Make sure to buy a high quality tofu. Best from the Asian supermarket.
Ingredients
200 g Asian tofu
250 g prawns
2 spring onion, chopped
250 ml veggie stock
2 tbs neutral oil
1 tbs fish sauce
1 clove garlic, minced
1 tsp black pepper
Salt
Sugar
1 small bunch coriander / cilantro
Peel prawns, pull out the black lines on their backs, clean well and wait to get dry. Use a fork to smash the prawns. Wash and cut tofu into circle shapes.
Heat 2 teaspoons oil in a pan and add minced garlic. Add smashed prawns together with salt, fish sauce and pepper. Fry for 2 – 3 minutes. Deglaze with veggie broth and bring to a boil. Reduce heat to low and add sliced tofu.
Simmer on low heat for 3 – 5 minutes, open the lid and season with salt and pepper. Then continue stewing until the broth is nearly absorbed into tofu and prawn meat. Shut down heat and add spring onions. Serve with fresh rice and coriander / cilantro.
