Indian Masala Rice (15 Minutes Recipe)
Masala rice or spiced rice is a dish than we often cook when we have some leftover rice. We don’t like to waste food and so we use left over food in many different recipes. This masala rice recipe is one of those recipes. Leftover rice is something that we have to cook with nearby twice a week. In this recipe we pimp the recie with tomatoes and some typical Indian. A perfect midweek meal for lazy chefs.
Ingredients
250 g leftover rice
1 red onion, chopped
1 medium size tomato, chopped
1 green chili, chopped
2 tbs neutral oil
Spices
½ tsp black mustard seeds
1 tbs curry leaves
½ tsp cumin seeds
1 pn asafoetida
¼ tsp turmeric powder
¼ tsp red chili powder
¼ tsp garam masala
½ tsp coriander powder
½ tsp fennel powder
Salt, to season
Fresh coriander leaves, for serving
First heat oil in a non-stick pan and fry mustard seeds until they start to splutter.
Now add cumin seeds and stir fry for one minute. Add onion and stir fry for one more minute.
Then add curry leaves and green chili and stir fry for 30 seconds before you add tomatoes. Stir fry for another minute.
Now add remaining spices and stir fry for a minute. Stir in rice that the masala coats the rice. Stir fry for 2-3 minutes.
Remove from heat and garnish with fresh coriander leaves. Serve with raita, pickle and papadums.
