Authentic Indian Garlic-Ginger Paste (Keeps fresh for six month)
One ingredient that is often used in many Indian kitchens is the Garlic-Ginger Paste. However, if you are not a big fan of store-bought Garlic-Ginger Paste, making it every time can feel like extra work. But don´t worry, I have this very simple and time saving recipe hack which is not only easy but keeps the paste fresh enough to be used for up to half a year.
First clean and peel ginger and garlic. Make sure to cut ginger into thin slices so it is easier to grind. In a mortar first grind ginger and then garlic before you add salt and neutral oil. Using a strong blender can also be helpful.
Store ginger-garlic paste in a airtight glass jart hat is washed (use boiling water) and thoroughly dried. It can last for up to five months in the fridge. If you put the paste into ice cube forms you can store it in the freezer up to six month.
