Filipino Fried Garlic Rice (Sinangag)

Sinangag or Garlic Fried Rice is a favorite part of every Filipino breakfast. Sinangag is a perfect side dish for many other fried dishes or stews. We prefer to keep it simple. This garlic fried rice tastes best with fried eggs and fresh spring onions.

Use leftover rice for your Sinangag

Although it seems very simple to cook sinangag but the success of this fried rice relies on the type and condition of rice that you will use. It is always best to use the non sticky rice varieties. Jasmine rice or long grain rice are the best and it is even better if these are leftover rice from the previous day. Leftover rice will be less sticky than fresh cooked rice. So this recipe is perfect when you want to get rid of your leftover rice.

Ingredients
550 g cooked leftover rice
5 garlic cloves, finely chopped
2 ½ tbs neutral oil
½ tsp salt
Optional
Fried Eggs
1-2 Spring onions, chopped

First heat oil in a non stick pan. While the oil is being heated, add finely chopped garlic. Stir fry garlic on medium heat. The pan should not be to hot. Stir until it becomes golden brown and crisp.

Now add rice and stir well for 3-4 minutes. Season with salt and stir fry for another 5 minutes.

Meanwhile you can use another pan to fry the eggs. Transfer the cooked Garlic Fried Rice to a plate, sprinkle with spring onions and serve with fried eggs.
