Cambodian Chicken Coconut Soup (Sgnor Sach Moun)
Sgnor Sach Moun is a simple but very delicious soup from Kambodia. We´ve always been big fans of the Khmer cuisine. Most recipes in Cambodia are very simple but also super delicious. This typical Khmer soup has a super fresh taste. The soup looks a bit like a western chicken soup. This recipe is just a delicious meal without many ingredients.
Ingredients
1 kg whole chicken, cut into large pieces
3 tbs jasmin rice, uncooked
1 lemongras stalk
3 kaffir lime leaves
5 cloves garlic, chopped
1 onion, rings
2-3 tbs fish sauce
1 tsp sugar
1 lime, juice
Toppings
5 scallions, thinly sliced
1 cup Thai Basil, roughly chopped
1 bunch fresh coriander / cilantro
Lime Wedges
In the beginnig place chicken pieces in a pot and add enough cold water to cover chicken. Now bring to a boil and cook for 5 minutes before you drain chicken. Rinse with fresh water and set chicken aside.
Now add fresh water, rice, lemongrass, kaffir lime leaves, garlic and onions. Bring to a boil and cook for 5 minutes.
Keep it simple
Add pre-cooked chicken pieces and let it boil for another 5 minutes. Turn heat down to low and simmer for 15 minutes before you shut down heat.
At the end season with fish sauce, lime juice and sugar. Taste and serve with herbs, lime wedges, Nam Pla Prik and steamed rice!
