Burmese Pork Curry with roasted Peanuts

One of our favorite countries in South East Asia is Myanmar. This county is well known for the temples of Bagan and everybody has heard about George Orwells book Burmese Days. But what about the Burmese cruisine? We had so much delicious traditional meals in Myanmar and so we try to give you an idea of what the Burmese kitchen is like. Meat is expencive and the Burmese eat definitely more vegetarian dishes. But this delicious creamy Burmese pork curry with meat can be found all over Myanmar!

 
 

4 SERVINGS

Ingredients
800 ml coconut cream
3 tbs red curry paste3 1 tbs fish sauce
2 ½ tbs palm sugar
1 lemongrass stalks, trimmed, cut into thirds, bruised
2 red onions, chopped
4 gloves garlic, finely chopped
1 kg shoulder pork, trimmed, cut into thin strips (**)
2 small red chilis, finely chopped
4 kaffir lime leaves, spine removed, shredded
75 g roasted peanuts
Ground steamed jasmine rice, to serve

First of all mix coconut milk, curry paste, fish sauce, sugar and lemongrass in a large saucepan. Bring to the boil. Cook, uncovered, on medium heat for 10 to 15 minutes or until sauce thickens slightly.

Stir in pork, chilis, onions, garlic, lime leaves and peanuts. Reduce heat to low and simmer, uncovered, stirring often, for 1 hour 20 minutes or until pork is tender.

Remove lemongrass and serve the curry with rice.

**Note: Make sure you get a pork shoulder with some fat. Otherwise the meat will become to chewy.
