Bhatura (Crispy Indian Flatbread)

Bhatura is a very popular street food dish in India. It is always deep fried and it is served as a side dish next to Chole (chickpeas) or Chana (lentils). You can find many recipes on the internet. With yeast, without yeast with water or yogurt. But wich one is the perfect recipe. We have tried many different recipes but this one is the best. Finally the Bhatura tastes like in India. It has the perfect consistency and it puffs up while deep fried. You have to start the night before but that´s the only way to get some authentic flatbreads. But this way is totally worth it!

 
 

10 FLATBREADS

Ingredients
500 g wheat flour
1/2 tsp baking powder
1 tsp salt
180 g yoghurt (low fat)
2 tbs sugar
1 tbs Ghee
Water as required
Oil for frying

First you have to preapare the dough: Mix 150 g flour, yogurt, baking powder and sugar in a bowl. Now cover the bowl with a cloth and set aside over night or for at least 8 hours. The next day you will see tiny bubbles on the surface. That means the natural fermentation worked.

Kneading: Take another bowl and mix the remaining flour with Ghee and salt. Add the fermented dough and some extra water. Knead with your hands for 5-10 minutes until you have a smooth and lightly sticky dough. Add flour if it is to wet or add water if it is to firm. Now set aside in a warm place for another 2 hours. And know: knead again.

Form 10 balls and roll them into 10-15 cm discs. Heat oil in a wok or pan and deep fry the discs until they puff up and turn golden brown. The fleatbreads are part of the super delicious Chole Bhature!
