Homemade Green Curry Paste
Green Curry Paste, thats one of the basic ingredients in the Thai cuisine. Most of the people, also in Thailand, use the green curry paste you can buy in Asian supermarkets. But have you ever thought about how easy it is to make your own curry paste? Here we show you how to make your own curry paste. In Thailand the original paste is made with shrimp paste but in our recipe we replaced the shrimp paste with dark soy sauce to get a vegan version. With our homemade version you can make your curry even better.
Ingredients
4 garlic cloves
10-15 green Thai chilis
2 shallots
2 kaffir lime leaves
1 lemongrass stalk, coarsely chopped
1 bunch fresh coriander/cilantro, stems and leaves
1 bunch fresh basil leaves
1 tbs grated galangal
1 tbs dark soy sauce
1 tbs lime juice
1 tsp salt
½ tsp pepper corns
1 tsp ground cumin
½ tsp ground coriander
All you need is…
a mortar. Use it to prestle all ingredients until you have a smooth paste. Place the paste in a jar. Cover it with a lid and store in the fridge. Keeps fresh for at least 6-8 weeks.
